Halloween Quilt Pot Pie

It has been in the high 90's this week, but I know that fall is right around the corner, can feel it in my bones.  While switching out the summer themed quilts for the Halloween quilts...
Halloween Jacks by JoAnn Mullaly
I started thinking about making dinner.  Here is what I had on hand: chicken, refrigerator pie crust, mini carrots, potato and a can of chicken broth.  I'll make pot pie!  Just crank up the AC and start everything in my cast iron skillet on top of the stove.
Then while making it I thought why not bake it in the skillet and eliminate dirtying one more dish.
It's already cooked so I just need to brown the crust.
This was my first ever homemade pot pie.  I ended up throwing in frozen corn and peas and thickening the stock with a rue.  Hope it tastes as good as it smells.

The pot pie looks so good! I'm sure much better than the ready made one I feed you recently! Love the pumpkin wall hanging alsi
